THE PESTAT OF FAGAGNA


Among the food&wine excellences of Friuli Venezia Giulia, the Pestàt di Fagagna stands out, a typical product that tells the story and culinary traditions of this village, recognized as among the most beautiful in Italy. Since 2006, Pestàt has been a Slow Food Presidium, protecting a now rare artisanal production.

Pestàt is a very peculiar seasoning created to preserve the scents and flavours of autumn vegetables and herbs in pork lard. Originally prepared at home by families, this food has kept its authenticity intact thanks to the few local butchers who still produce it today.

Its processing begins with the lard of pigs raised in a semi-wild state, fed with natural food, coming from small local farms. The lard is then minced and mixed with chopped carrots, celery, onion, sage, rosemary, leek, garlic and parsley, with the addition of salt, pepper, cinnamon and allspice. The mixture can be stuffed into natural casings for maturation that varies from 30 days to a year, or stored in glass jars in oil for more immediate consumption.

The Pestàt is incredibly versatile and lends itself to multiple uses. It can be melted in a pan as a base for sautés, enhancing risottos, soups, minestrone and meat dishes.
There is also a less traditional variant, the red Pestàt, which involves the addition of tomato, ideal for pasta sauces or for spreading on a bruschetta.
